To defeat the final boss in Super Mario Odyssey, you should jump and leap over his tail. There will be some purple decoys and a boxing hat thrown by Bowser. He'll swing his tail twice before collapsing. He'll do the whole jumping/shock wave tactics if he keeps focused on the white one and hits it.
