What happens if you start a new game?

I agree. If you start a New Game by selecting New in the main menu, the chapter progress will be wiped out, as well as unlocked perks. Collectibles or options settings are not deleted when a new game is started. If you want to reset these, you have to manually remove the player profile save from the game.
